Lucky Penne Italian Chopped Pasta Salad

Ingredients:

  • 1 box GOODLES Lucky Penne 

  • 1 head radicchio 

  • 1 small shallot 

  • ½ cup castelvetrano olives 

  • 3 oz. sundried tomatoes 

  • 1 can artichoke hearts 

  • ⅓ cup fresh parsley

  • Parmesan

  • Salt & pepper 

For the dressing: 

  • 3 anchovy filets, chopped

  • 1 clove garlic 

  • 1 tbl dijon mustard 

  • 3 tbl red wine vinegar

  • 3 tbl olive oil 

  • ½ lemon, juice 

*whisk to combine or blend in a food processor

Directions:

  1. Bring a large pot of salted water to a boil. Cook GOODLES’ Lucky Penne for 9-12 minutes until al dente. 

  2. While the pasta cooks, chop all salad ingredients and make the dressing. Combine all chopped salad ingredients into a large bowl. 

  3. Add the pasta and toss well. Season with a little salt and pepper. Mix in the dressing and continue to toss until well combined. Finish off with thin slices of fresh parmesan.
